Preparation steps
1. Preheat the oven to 200°C (400°F). Peel potatoes, cut into chunks and place in a pot of cold salted water.
2. Pat the cod fillets dry. Season lightly with salt and pepper on both sides.
3. Set up the breading: flour in one shallow dish, beaten eggs in another, breadcrumbs mixed with a pinch of salt in a third.
4. Coat each fillet in flour, then egg, then breadcrumbs, pressing gently. Place on an oiled baking sheet.
5. Bring potatoes to a boil and cook 15–18 minutes. Warm the peas for 5 minutes in a small pot of water or in the microwave.
6. Bake breaded fillets 15–18 minutes until golden and cooked through.
7. Drain potatoes and mash with butter and warm milk. Season lightly.
8. Serve hot: mash, peas and breaded cod.
