Preparation steps 1 Cut the pork into long strips 4 cm thick. 2 Prick the meat all over with a fork. 3 Finely chop the garlic. 4 Grate the ginger. 5 In a dish, mix the soy sauce, the oyster sauce, half the honey, the brown sugar, half the garlic, the ginger and the sesame oil. 6 Coat the pork strips in the marinade. 7 Cover the dish. 8 Leave to marinate for 4 h in the fridge, turning the meat halfway through. 9 Take the meat out of the fridge 30 min before cooking. 10 Preheat the oven to 200 °C. 11 Line a baking tray with foil. 12 Set a rack over the tray. 13 Pour a little water into the tray to stop the juices from burning. 14 Lift the pork out of the marinade, keeping the marinade. 15 Lay the pork on the rack. 16 Roast for 20 min. 17 Meanwhile, pour the reserved marinade into a small saucepan with the rest of the honey. 18 Reduce the marinade for 3 min at a simmer until syrupy. 19 Rinse the rice in cold water, rubbing it between your fingers, until the water runs almost clear. 20 Drain the rice. 21 Put the rice in a heavy-based saucepan. 22 Cover the rice with cold water to 1.5 cm above the grains. 23 Bring to the boil over high heat. 24 Cover and cook for 12 min over very low heat. 25 Leave the rice to rest off the heat for 10 min without lifting the lid. 26 Brush the pork all over with the glaze. 27 Turn the pork over. 28 Return it to the oven for 15 min. 29 Brush the pork with glaze again. 30 Put the pork under the grill for 3 min until the edges caramelise and char slightly. 31 Leave the pork to rest for 5 min. 32 Meanwhile, cut the broccoli into small florets. 33 Plunge the broccoli into a large pan of boiling water for 2 min. 34 Drain the broccoli. 35 Heat the oil in the wok over high heat. 36 Fry the rest of the garlic for 30 seconds. 37 Stir-fry the broccoli for 2 min. 38 Season the broccoli with a dash of soy sauce. 39 Toast the sesame seeds in a dry frying pan for 2 min. 40 Thinly slice the spring onions. 41 Slice the pork thinly. 42 Fluff the rice with a spatula. 43 Arrange the pork slices on the rice. 44 Spoon a little of the remaining glaze over the pork. 45 Sprinkle with the sesame seeds and spring onions. 46 Serve with the broccoli.
