Preparation steps

Heat 30 ml olive oil. Brown 1.2 kg chicken thighs on all sides. Set aside.

In the pot, fry 200 g bacon lardons, 2 onions, 250 g sliced carrots and 4 garlic cloves. Sprinkle with 20 g flour, stir.

Return the chicken. Add 750 ml red wine and 500 ml chicken stock. Add thyme, 1 bay leaf, salt and pepper.

Simmer covered 45 minutes.

Brown 250 g mushrooms and add them 10 minutes before the end.

Meanwhile, boil 800 g potatoes in salted water. Drain and mash with 100 g butter and 200 ml milk.

Serve the coq au vin with the mash.
