Coq au vin and mashed potatoes
A traditional comforting French dish, coq au vin is simmered in rich red wine, accompanied by creamy mashed potatoes for a delicious meal.

Preparation steps
Heat the olive oil in a large saucepan or casserole dish over medium heat. Add the pieces of rooster (or chicken) and brown them on all sides. Remove them and reserve.
In the same pan, add the onions and garlic, sauté until translucent.
Return the rooster to the pan, add the red wine, chicken stock, thyme, bay leaf, and season with salt and pepper.
Simmer over low heat for about 45 minutes, until the rooster or chicken is tender.
Meanwhile, peel the potatoes, cut them into pieces and cook them in boiling salted water until they are tender.
Drain the potatoes and mash them with the butter and milk to obtain a smooth puree.
Serve the coq au vin hot with the mashed potatoes.
