Eggplant Parmesan
A classic Italian dish, Eggplant Parmesan is deliciously baked with tomato sauce, mozzarella, and parmesan, perfect for a comforting meal.

Preparation steps
Slice the eggplants and sprinkle them with salt. Let them sit for about 30 minutes to draw out excess moisture.
Rinse the eggplants and pat them dry with a paper towel.
In a skillet, heat olive oil and fry the eggplant slices until golden brown on both sides. Set aside.
In a baking dish, spread a layer of tomato sauce on the bottom.
Layer half of the fried eggplants on top of the sauce, followed by a layer of mozzarella and a sprinkle of parmesan.
Repeat the layers with the remaining eggplants, mozzarella, and parmesan.
Finish with a generous layer of tomato sauce and a final sprinkle of parmesan.
Bake in a preheated oven at 180°C (350°F) for about 30-40 minutes until bubbly and golden.
Let it cool for a few minutes before serving.
