Finnish Salmon Soup (Lohikeitto)

In a large pot, melt the butter over medium heat. Add the carrots and leeks and sauté for 5 minutes, stirring.

Add the potatoes, then pour in the broth. Season with salt, pepper, and dill. Bring to a boil, cover, and let simmer for 15 to 18 minutes (until the potatoes are tender).

Add the salmon pieces and the cream, gently stirring. Cook uncovered for 1 minute, then turn off the heat. Cover and let rest for 4 to 5 minutes: the salmon will finish cooking gently.

Serve hot, garnished with a bit of fresh dill on top.
