Paccheri with Zucchini Cream, Burrata and Salmon
A tasty and creamy dish that perfectly combines paccheri, the sweetness of zucchini, and the richness of salmon, all enhanced by melting burrata and crunchy pistachios.

Preparation steps
Cut the zucchinis into small cubes. Sauté them in a pan with a drizzle of olive oil (and garlic if desired). Add a little water and cook until they are very tender.
Blend the cooked zucchini with basil, parmesan, half of the pistachios, and a drizzle of olive oil until obtaining a cream.
Remove the skin from the salmon and cut it into strips. Brown in the pan, season lightly if necessary, pepper, and then add the lemon juice.
Add the zucchini cream to the salmon, mix, and keep warm.
Cook the pasta in boiling salted water. Halfway through cooking, transfer them to the pan with the sauce. Add a ladleful of cooking water and finish cooking while stirring to coat well.
Off the heat, add some burrata, mix gently (without breaking it too much). Serve with the remaining burrata, pistachios, and pepper.
