Penne all'arrabbiata
A spicy and flavorful pasta dish, perfect for a comforting dinner. The arrabbiata sauce, made with tomatoes and peppers, brings a pleasant heat that will delight your taste buds.

Preparation of the sauce: In a large skillet, heat the olive oil over medium heat. Add the garlic and chilli, then sauté for about 1 minute until fragrant. Add the crushed tomatoes, season (salt, pepper) and simmer gently for 10-15 minutes.
While the sauce is simmering, bring a large pot of salted water to a boil. Dip the penne in it.
The crucial step: Remove the pasta from the water halfway through cooking (when it is still very firm) using a slotted spoon or by draining it, but be sure to keep a cup of the cooking water.
The "Risottata" finish: Transfer the pasta directly to the pan containing the sauce. Add a ladle of pasta cooking water. Finish cooking the pasta over medium heat in the sauce, stirring regularly until al dente.
Serving: Serve hot, garnished with fresh basil and grated cheese.
