Preparation steps

Cut the eggplant, peppers, zucchini and tomatoes into cubes.

In a large skillet, heat the olive oil over medium heat.

Add the chopped onions and garlic, sauté until translucent.

Add the eggplant and cook for 5 minutes.

Add the peppers and cook for another 5 minutes.

Add the zucchini and tomatoes, then season with salt, pepper and thyme.

Leave to simmer over low heat for 30 minutes, stirring occasionally.

Serve hot, garnished with fresh basil.
