Rustic potato soup
A comforting and tasty soup, perfect for winter evenings. Made up of potatoes, fresh vegetables and smoked bacon, it will be appreciated by the whole family.

Butter
13 g

Potatoes
600 g

Salt

Water
470 ml

Leek

Parsley
10 g

Shallots

Vegetable stock

Smoked sausages

Preparation steps

Chop the parsley and reserve.

Cut all the vegetables into small cubes

Brown the bacon for 4â5 min in the butter/oil.

Add shallots, celery, carrots and leeks, sweat them for 5 mins.

Add the potatoes, mix for 1 min.

Pour the water into the bottom of the vegetables, salt/pepper and half of the parsley and bring to the boil.

Simmer for 20â25 min over low heat.

Crush 1 to 2 ladles (rustic top option) and return to the pan.

Add cream and sausage slices continue to heat for 2â3 min.

Serve with the rest of the parsley.
