Shrimp with Thai Curry with Coconut Milk and Red Pepper

Heat the oil in a frying pan over moderate heat.
Add the onions and cook, stirring, until they become soft and slightly transparent.
Then add the red pepper cut into strips, the ginger and the garlic, then continue cooking for about a minute to release the aromas.
Sprinkle the red curry paste and mix thoroughly to coat the ingredients well.
Add the shrimp and let them cook until they change color.
Pour in the coconut milk, mix and let simmer for a few minutes.
Add the fish sauce, sugar and lime juice then mix again.
Garnish with fresh coriander and serve hot.
