Spaghetti alla Puttanesca

Crushed tomatoes

Preparation steps

Bring a large pot of water to the boil, lightly salt, cook the spaghetti until al dente.

Keep a ladle of cooking water before draining.

While the pasta cooks, in a large skillet, heat the olive oil.

Add the minced chili garlic, brown for 30 seconds without burning.

Add the anchovy fillets, stir: they will 'dissolve' in the oil (1 min).

Pour in the crushed tomatoes, add olives and capers.

Leave to simmer for 8 to 10 minutes, until it thickens a little.

Season with pepper (taste before adding salt).

Add the spaghetti to the pan, mix for 1 to 2 minutes.

If necessary, add a little cooking water to bind and make it 'saucy'.
