Preparation steps

Slice the onion. Mince the garlic. Drain and rinse the red beans.

Heat oil in a saucepan over medium heat. Soften onion and garlic 3 minutes until translucent.

Add the rice, beans, cumin, paprika and a pinch of salt. Stir 1 minute to toast the rice.

Cover with the vegetable stock. Bring to a boil, then simmer covered 20 minutes until absorbed.

Turn off the heat, add pepper and rest covered 5 minutes. Fluff with a fork and serve.
