Preparation steps
Cook the rice according to the packet instructions.
Marinate the chicken with soy sauce, oyster sauce and sesame oil for at least 30 minutes.
In a wok or large skillet, heat a little oil over medium-high heat.
Add the ginger and garlic, and stir-fry until fragrant.
Add the marinated chicken and cook until browned and cooked through.
Add the white parts of the spring onions and stir-fry a few more minutes.
Pour in the remaining marinade, add a splash of water and stir until the sauce thickens.
Serve over the rice, garnished with the green parts of the spring onions.
