Prepare the marinade by cracking the egg into a bowl and lightly beating it with a fork. Add finely chopped garlic and the finely grated zest of the lemon. Incorporate the chicken strips, mixing well to coat them, and let it rest for 10 to 15 minutes.

Remove the lemon zest from the dish. Add the cornstarch directly to the marinated chicken. Mix thoroughly so that each piece is lightly coated.

Heat the oil in a wok or large skillet over high heat. Place the chicken strips in a single layer, without overlapping. Let them sear for 2 minutes without stirring too much.

Lower the heat slightly and continue cooking for 1 to 2 minutes, stirring, until the chicken is golden and cooked through.

Squeeze the lemon and pour the juice directly into the wok. Add the chopped green onion. Mix quickly, let it heat for 30 seconds, then remove from heat.
