Preparation steps
Marinate the pork with salt, white pepper, Shaoxing wine, sugar, and crushed ginger for 10 minutes.
Prepare the universal breadcrumbs.
In a bowl, mix ketchup, sugar, rice vinegar, salt, water, and cornstarch to create the sauce.
Dip the marinated pork pieces in the breadcrumbs and deep fry in oil at 160 degrees until slightly golden.
Once all pieces are fried, fry them a second time until golden brown. Set aside.
In a wok over medium-high heat, sauté the spring onion and ginger in a bit of oil for 1 minute.
Add the mixed sauce and stir until it thickens nicely.
Gently add the pork to the sauce and mix well to coat the pieces.
